Surely Chitterlings sir?

I much prefer a salad of roast bone marrow and parsley with a side order of breakfast radish. Perhaps washed down with a cheeky little red from M Prandon in St Emilion.

If not from Beth Nal Green Towers then preferably from the inestimable Fergus Henderson at St John's.
