Because it was the date for a Pagan festival...

to mark the middle of winter and when the Christian Church decided the dates to celebrate they chose mainly important times in the Pagan calendar to attempt to erradicate Paganism and in time convert the Pagans to Christianity.

Halloween is the same. All Hallows Eve was a major date in the Pagan calendar when some of the most important Gods were worshipped, so the early Christians had Halloween the day after to 'remove evil spirits' and send out a message to the Pagans that their Gods were evil.

Mainly a case of getting bums on seats in early Christian churches.
