Maybe you should listen to people who have actual experience.

As for food varies by cruise line but some is nothing short of excellent.
Is it Michelin 3 star good...obviously not but it's still really good at the specialty restaurants.
RC buffets are also really good.
Went to one on this trip that had lobster tails, scallops, jumbo shrimp, steaks and lots of other seafood.
I can't imagine any all inclusive resorts that offer that.
The service is nearly always incredible.
