Spatchcocking

Take bone out of bird and place both hands on breast, seeking to flatten. Often precedes a damn good roasting. I like to use my special salty white sauce for this:

Toss off some pancetta, add four lugs of semi-skimmed extra-virgin milk, boil for fifty nine seconds, then have a w**k into it.
