Saw a documentary about this a couple of years ago ...

basically it's down to the fact that human flesh burns very slowly (bit like pork). They did a similar experiment with a pig. Most of these cases start by someone dropping a cigarette butt on their clothes, and as it smoulders the smoke renders the person unconscious, then as it smoulders and begins to heat up, the flesh/fat continues to burn and drip until there's nothing left, apart from skinny bits. That's also why it's contained in a small area, as there isn't any flames as such.
