I've done some good timelapses of changing skies, sunsets over landscapes and busy areas, plus plenty of 360 and 180 videos
You really need a pair of goggles to appreciate them fully and there aren't 'that' many situations where you want 360º.
I went to Iguaçu falls in Argentina-Brazil last year though and it was excellent for that. The pace is f**king epic to be fair
