Israel travel recs

Oh Wrath of knowledge -

i'm trying to wangle a work trip to Tel Aviv in March in order to tack on a few days r&r. Likely to have 3 or 4 free days. Anyone been recently and have any tips for where to go/what to see?

Jerusalem and Dead Sea are likely to be on the hit list. Is the Sea of Galilee worth a trip? Any tips for tour companies? Seem to be stacks of coach tours but I fancy sonething a little less conveyor-belt.

Much to do in Tel Aviv itself? (Wife will have a couple of days to kill while I'm at conferences etc.)

Hotel/food/bar recs always welcome.
