I've made the best pasta sauce ever................

finely chopped red onion, garlic, a lot of red wine, tomato puree, can of chopped tomatoes, a chopped fresh tomato, roasted red peppers. Some oregano, basil, a big red chilli finely chopped, black pepper. Later added some water and cooked for... I don't know how long.

Tastes sooooooooooooo silky smooth. I think it might be because I used 3 different lots of tomatoes (puree, canned & puree).

I then added some roasted aubergine & courgettes and wholemeal pasta, plus veggie Parmesan cheese.
