2 things to check
Firstly documents and data. Go to manage storage via general/usage. It will show you how much data is connected to each app you have. Select the app and it will tell you how much data the actual app represents and the rest is docs and data. This is usually stuff like goodie searches etc. if you delete the app and reinstall it, you will clear the history and data and it will revert to the original size.
Also, when you delete old photos, they are held on your phone for 30 days in case you want to reinstate them. This obviously takes up space until they auto delete. Simply clear all the deleted photos from your phone regularly and this should keep that space clear for you.
