You can spend an age in Edinburgh itself

Fife has got a bunch of nice spots: St Andrews, Falkland, all the East Neuk fishing villages. Pop up East Lomond (you can drive almost to the top if you're feeling lazy) for views.

Further north, you'll make Pitlochry pretty quickly. Entry to the highlands and loads of nice spots about.

Of course, if you want serious drama, west coast is your place.
