Snake Pass starts at the Ladybower, really, although everyone calls that whole
stretch of A57 the "Snake Pass".
It will be quite busy, it always is. But you'll hardly be lone cyclists, there'll be plenty out there with you.
The Hope Valley/Hathersage route might not be so interesting hills-wise, but the roads are a bit broader, and therefore more conducive to bikefacing.
