I always cook onion long and slow and then cool them before adding to the mix...

They add a lovely sweetness. Don't handle the meat too much when you're making them, make a dimple in the centre to prevent shrinkage and don't press them down in the pan or you'll lose the moisture/juiciness.

Most of the time I don't put onion in the burger, just add a few onion rings in the bun.
