i aint got superior knowledge as i know ugger all bout plumbing/heating systems, just that similar/same thing happened to me a few years ago....

the temp probe inside the cylinder is connected to an external valve. This valve shold have either a rotary knob or slide switch, so you should be able to set how hot the water in your cylinder reaches before th valve switches off the heat.... my slider made no diff and my hot water come out at about 80 degrees even when shower at lowest setting! Had to replace the entire valve....
