Basically site layouts should be done using XHTML and CSS and not tables
The main content and navigation of the site should be done in text as apposed to images. Any images you do use should use alt tags to describe what they are showing.
Text should be specified using relative sizes to ensure that it can be resized by the partially sighted.
You can look at sites like User Posted Link and also try googling assessable websites.
