I once had Marco Pierre thingy's stuffed pig's trotter (hommage a Pierre Koffman)

It was awesome though I was a little disconcerted when it arrived, because it looked exactly like a pig's front leg plus trotter. (The recipe involves removing all the bone and flesh, stuffing the leg with (I think) sweetbreads and mushrooms, then carefully sewing it back up so it looks like a leg again.)
