From a personal point of view I have owned both 720p and 1080p projectors and there is only a slight difference in quality.
The best 720p give a better picture than the worst 1080p
If you get a demo get them to show a film in full blue ray and then standard def broadcasts (480p for US) and 576 PAL for the UK.
So you can compare the picture quality at both resolutions.
The bottom line it's about picture quality not just resolution.
